Se denomina levadura a cualquiera de los diversos hongos microscópicos unicelulares que son importantes por su capacidad para realizar la descomposición mediante fermentación de diversos cuerpos orgánicos, principalmente los azúcares o hidratos de carbono, produciendo distintas sustancias.
